I would add 'overdoing it with the spices' and 'adding too much salt before tasting'.

DH is a Roue Nazi. Do not DARE to make a gravy by adding flour to water, and then pour it into a pan. Doesn't matter who you are. I must admit, haven't had a lump in gravy for years.
