Default Augustation

August kinda crept up on me. Its felt like August around here since May so you'll just have to forgive me.

Whats on the menu?!!

Tonight we had open face sandwiches with cheese and green chilis. Our compromise to the all American Cheeseburger.

I took one boneless chicken breast, 1/2 box of thin spaghetti, one small onion, one large carrot and 1/2 bag of shredded cabbage for cole slaw and made enough stir fried teriyaki noodles for 6 meals for son and I. For just under $4.00

Last night I made a grilled cheese and tomato sandwich with a diced jalapano thrown in.

Cold beer to wash it down.

Linguini with red and orange peppers and a bit of salami and cheese with mushrooms and green beans in cream. Tonite a formerly very handsome feisty lobster steamed and corn on the cob. Corn bread.

Tomorrow a diet day with loads of liquids for the weekend.

The peach festival on saturday.

Refrigerator buffet huh Sue? We do that from time to time.

Tonight we're having Chicken baked with Caribbean Jerk seasoning on rice with a salad of homegrown tomatoes, cucumbers and green onion.

blue - it beats waste & I still have a tendency to cook a bit too much. It's hot & humid - our appetites have adjusted accordingly but... my brain hasn't when it comes to food prep.

Tomorrow will be nice eating. SO & I are biking to Wolfe Island tomorrow after I pick up a few Rxs for him & SD. If they're not too busy in there... & I plan on being there as soon as they open. With luck & good timing on the ferry - we should be on the island by eleven & at out beach by noon - we like to bike slowly & enjoy the sights along the way.

Once I get a nice butt shaped hollow scooped out on my beachlet, I will slowly start feasting on - sandwiches made of fresh Portuguese buns, pate, grated marble cheese & mustard. I also have water melon, canteloupe, cherries, green grapes, a nice shrimp slaad... all portioned out for each of us in waterproof containers - which I'll still place in Ziplocks. We'll bring orange juice, lime Koolade & raspberry lemonade as it's supposed to be a hot day - should be nice by the water.

When we get home, we can chomp on any leftovers... IF we get home...LOL

There's a risk of rain so we'll see. Unless it's going to hammer down, I'd rather go tomorrow. Saturday is supposed to be an absolute scorcher with high humidity on top of that. I'd rather stay home with fans on, minimal clothing & watch Olympics.

Black bean salsa with corn and rice and sour cream wrapped in tortillas; cheese and rice, cantalope, cherries, figs and tortilla chips.

Hah! Knew I forgot something - thanx for the reminder about tortilla chips - I've found a sensational, tasty option that even my step daughter an eat without harm... if I give her a chance to get at the bag...LOL

It's too hot to cook and eat. I had strawberries and grapes for dinner. If I get hungry later we have corn flakes and raisin bran. There's eggs and canned and frozen food in the house for whatever DH wants.

Last nights chicken was terrific. Max made a satay sauce to go with and that really put it over the top. I'm not sure what we'll do for supper tonight. Have to get back with you on that one.

BG have you ever tried peanut chicken? It sounds like an odd combo but I got hooked on it at a Chinese buffet. The sauce is so easy, I just use creamy PB, a bit of oil and garlic to taste. I could see that soy sauce might be good in it too.

I'm on a finger banana and peanut butter kick. A couple for breakfast. Might cook a few tonite along with the cheapo Bing Cherries. Best Price this year was 1.99 a pound so it is Bing cherries all week long. Good for arthritic joints so they say.

Maybe some Goya beans with Jalapeno pepper and a meatball or two with spices. sliced up a tomato and cuke salad with sunflower seeds last nite.

Will stop by the local farmer market and pick up more $1 tomatoes, radishes and other salad fixings. Maybe some local peaches.

Spicey black beans with a load of peppers, olives, onions and a little shredded beef (cooked) over a bed of lettuce, tomatoes and shredded carrots. Modified salsa / mayonaise for a dressing.

Today's forecast is calling for the hottest day of the summer - just on temperature alone. Add the humidity & it's not a day for cooking. One exception - I'm jonesing for a Dr. Oetker mix lemon pudding cake so I'm about to do up one of those before it starts getting hot.

Other than that - today is cold cuts - 3 or 4 varieties, buns, I have various fruit & veg already cut up, we have cooked shrimp that just need thawing, loads of lemonade, Koolade & juices... tonight is supposed to be hot as well so I may not cook tomorrow - we have plenty of cold stuff.

Bought white corn on the cob at the local farmers market, and two huge, absolutly enormous heirloom tomatoes at $2 each. Probably 5 pounds of heirloom tomatoes. The first stand, (who I think is the local historian) was charging just under $4 a pound for same. One of his smaller tomatoes was $6, too rich for my blood. He is also a landscaper and has his "Garford", vintage truck, (gorgeous) parked next to his stand. He is a top dollar "social landscaper" also. Not in my price range for anything at all.

I don't eat "top dollar tomatoes". Mine have to taste good, but be reasonably priced. I think this is enough tomoto to last all of August, unless they have something really special next week. Radishes were 2.50 a bunch, but I passed.

A loaf of bread at this market is $6. also too pricey. I'll pick up a pecan and raison bread next week for under $4, which I'm sure is excellent.++++

Sounds good Feather. We're big fans of that sort of thing. We'll definitely give your sauce a try.

Last night we had steak, baked potatoes and okra from the garden with green onion and peppers.

Tonight it will be potluck at a hootenanny here at the house. Max and I are making fried gyoza with dipping sauces.

Last night's dinner was eggplant parmigiana gifted to us by a lady we gave some homegrown eggplant to. Her ex's Italian grandmother taught her how to make loads of authentic Italian dishes. She may become our new best friend-the eggplant parm was exquisite. DW was in Heaven, now to get her instructions on how to make it.

My buddy made it back to NH today after his fishing trip. He fished from Maine to New Jersey. He's only back for two days and then will be heading back out.

He brought me two yellowfin, two mako sharks and two stripers.

It's been a very long day processing these and I now have more fish than I'll eat in a year. There will be many Saturday night fish fries in my future.

So once everything was cleaned up, I put the grill under cover ( T-storms) and grilled a few tuna steaks and some corn on the cob.

Cold beer to wash it down.

It was excellent.

Sounds wonderful Coyote! You may have to expand your culinary explorations to accomodate Some things that come to mind: Seviche, Gravlox, Pickled herring er Mako, Fish Sausage (I have some recipes), smoked fish (I'm sure you've already done this one), sashimi (yellowfin is the bomb)....

Tonight we're grazing on leftovers from the burger cookout and granddaughter's Birthday. We ate more at lunch that we usually eat in a whole day LOL.

The smoker will be here in the morning.

Have you tried the fish sausage recipes? I'd sure like to give that a try.

The tuna, sliced paper thin and dipped in vinegar was very good. We tried apple cider, balsamic and plum vinegars. Plum was my favorite.

I haven't tried them but they sound interesting. Fish jerky could be interesting as well.

Yesterday cold gazpacheo for lunch. Today hot black bean soup.

I have a few cans of Goya black beans with jalapeno peppers, if I put that through a blender it would make as good a soup as this. 1.19 a can versus $4 at the patisserie. Of course the entertainment value of the customers and the pleasure of being out is missing. The patisserie has good soups.

Tomorrow I'm making some Italian chicken broth with spinach leaves and a egg swirled through it. Back to soups which I like better than chicken dishes. I threw away a lot of the barbequed chicken, since the dogs next door haven't been out and about when I leave the house. The chicken doesn't have antibiotics, but somehow I don't care for the taste. All I ever eat are the drumsticks and wings, so even at 3.99 it is a waste.

An article I read said that eating prunes helps stop bone loss, so I'll be adding dried prunes to my meals.

Coyote, I posted some fish sausage and pickle recipes in the kitchen. I know with your expertise you'll be able to modify them to your liking and ingredients!
