So far I'm having salad, I have no clue what all DS plans on bringing over. Last night he said pork chops and hot dogs. If he brings them fine if not I have a pork chop in the freezer to heat up.

last night we had fried rice minus the rice replacing it with grated fresh cauliflower it was tasty

I've heard of people doing that. Also using cooked cauliflower to make a pizza crust for folks who are gluten intolerant. Much cheaper than those specialty flours I would imagine

Today we're having fried fish, baked sweet potato fries and beets ( saving the juice to make pickled eggs again)

I've used cauliflower to make pizza crust before and it is really very good.

Tonight I made veggie pizza for supper, but with a regular crust. I used my regular homemade tomato sauce and topped with diced plum tomatoes (with the seeds removed), mushrooms, green pepper, red onion, pickled jalapeno peppers and mozzarella cheese. Yum!!

A friend called and wanted to take me out for dinner. We had New York strip steak, baked potato, garlic knot and salad bar. It was so good. They know my friend pretty well there and after we ate, the waitress brought us complementary cheese cake from The Cheesecake Factory. It was melt in your mouth yummy. I brought home half my steak and most of my potato. The sugar is wearing off and by the time bedtime rolls around it won't be hard to fall asleep.

For supper last night I made pulled pork burritos with red and green bell peppers, red onion, garlic, a few mushrooms I had hanging around, pinto beans, chili powder, ground cumin, cilantro and lime juice. Served them with the usual condiments - spicy salsa, sour cream, guacamole, cheese. I also made a batch of yellow rice in my rice cooker.

Making a quick stovetop cassoulet. Ground sausage, baked beans, chopped onions, chopped garlic, diced tomatoes, fresh parsley and seasoned bread crumbs mixed with a little olive oil for the crumb topping.
Cheesey garlic bread sticks to go with


Hubby worked outside in the heat all day. He needs something to get him recharged

Tonight for supper we had poached salmon, Caesar salad, whole wheat spaghetti with broccoli pesto, and I also opened a really nice bottle of local white wine for us to have with it. Dessert was a lovely rhubarb apple crisp made with rhubarb from our back yard.

Last night I had pizza and today I had the left over pizza. They have brought back the flat bread pizza at Walmart. We used to get them and split them between us. Now that I'm alone I guess I get lots more left overs.
