Exclamation Bad elderberry extract?

Well that was fun. Not.

I'm coming down with DH's cold, and feel like crap. Cracked open a new bottle of elderberry extract, from Herbs Etc., put my 40 drops in a shot glass with a half ounce of water, and threw it back.... AAACK! Spit it out. Tastes like vinegar!

This is one of 5 bottles I ordered in January. I cracked open 2 more, same smell. I still have two unopened ones, and I opted to take some oil of oregano instead.

Anyone have elderberry extract ferment on them? Do you think this is what happened? I always keep them in a cool, dark cupboard. I've always ordered from Herbs Etc. It should taste like musty berry juice.

I don't know rb. I would definitely contact the company. We tincture our own and have never had any problems.

Thanks, bg. I'm wondering if it's mispackaged. I wouldn't be surprised to find out it's apple cider vinegar, it's that strong.

BG, don't you use vodka or a similar liquor for an extract? I don't think that CAN ferment! The alcohol content should kill any yeasts.

Yes, I use vodka and you're right it's high enough proof not to have to worry about secondary fermentation. I suspect rb's source has diluted their extraction to the point where the sugars can ferment with acetic acid producing bacteria via contamination or, possibly, they may have changed their formula to an acid(vinegar) extraction? Who knows but I would certainly call them and ask. It sounds like a quality problem to me.

We too use Vodka to make elderberry tincture...we use fresh berries, found wild in abundance here locally...never had a problem fermenting (!)

We have some that dates back to 2010, and it's still fine...clear and potent!

I have made elderberry extract with apple cider vinegar. It tastes atrocious, but it does the job. But if the taste is different than the usual stuff from the company, contact the company to make sure it is good. Or their website might contain formulation information, too.

I am going to go with a formulation change.

A few companies are moving away from alcohol because of liability with Dram Shop laws.

Hmmm...product info online says grain alcohol and purified water. Don't know if that's a change from previous shipments I've had. Something in alcohol shouldn't taste like vinegar, though, right?

Question for those of you who make your own extract: Do you use 100 or 80 proof vodka? The 100 proof is almost twice as much as the 80 proof is why I ask. Do you notice a difference in quality? Also, do you find the extract works best with fresh or dried berries? My elderberries (which are not native to my area and which I planted from seed) are going to go gangbusters this year and I'm looking forward to making my own tincture this year. Currently, I only make lemon balm tincture and I've only used the 100 proof for that.

Any input would be greatly appreciated. Thanks!

I use grain alcohol on elderberry and no secondary ferment problems at that high of an alcohol. I do also make a blackberry cordial with blackberries sugar and normal proof white rum and I have had that try to run a secondary ferment on me by the time all the liquid from the berries diluted the mixture. I just topped off with more rum and never noticed it had gone past to vinegar in flavor.

I would guess a contaminated or mixed up batch. What color is it? Elderberries don't have that much natural sugars and moisture content to overcome a grain alcohol bath by any means.

Well, something went wrong. The company responded yesterday that they want all 5 bottles back. Today they shipped me new ones. Certainly is great customer service.

I use 80 proof AndreaCa.

Max and I have been using it for years and have noticed that we have significantly fewer colds or flu and when we do come down with a bug its very mild and only lasts a couple of days compared to other folks in our community with whatever bug is going around.

gsgs, it works for me for most colds. If it doesn't work, I switch to oil of oregano, because I assume that it's bacterial. Either way, I get better fast.
