Default 20 Pounds of Chicken - preps

Yea - I know. I am trying to link preps and chicken!

Screw it. Got 20 pounds and just put it in the oven with a little bit of seasoning. All leg quarters. Going to be bitch'in BBQ in a couple of hours. I am also hoping to convert to stock.

I will add later....

Got it out of the oven and checked it out.

MY GOD WHAT WAS I THINKING>... Give me a frigging break _ its going to take me all night to process 20 pounds!

If I am going to do that again, I got to start early in the morning.

I took allt the leg quarters and deboned them, and subdivided the meat into a bunch of freezer bags. I just didn't have enough space in my head to do the stock / soup bit.

Local grocery has 10 pound bags on sale again for $5.00 each. But I just dont have the energy.

I made barbaque out of a lot of the chicken and salad and sandwiches out of the rest. It was a good deal, but could have been a lot better if I had started early - REAL early.

you might consider putting them bones and all into quart canning jars and pressure canning them..........you could probably get by with just separating the leg and thigh before packing them into jars.
