2 cups flour
1 1/2 TB Baking Powder
1 cup sugar
1 1/2 cups chopped strawberries
1/2 cup butter
1/2 cup milk
1 tsp vanilla.
Combine dry ingredients, in separate bowl combine wet (leave strawberries out). Add the dry to the wet, mix. DON'T OVERMIX. Add strawberries, gently fold into batter.
Put muffin batter into muffin tin (with papers or silicone liners or whatever you do/use)
BEFORE baking: make struesel topping:
1/2 tsp cinnamon
Sprinkle the topping over the muffins...bake for approx 25 mins, use back of spoon to test if muffins are done (should feel firm, not mushy.)
