There is a lot of talk of some sort of new meat destroying bacteria around in North Europe (Finish) Clostridium estertheticum .

I could not find much about it, the meat emits foul gas that smells of cheese, can have green spots in/on it,, can swell the packaging, litle seems to be know about the Clostridium estertheticum bacteria except it likes the cold and is spreading fast. The bacteria C. estertheticum is part of the Clostridium family as C. botulinum is and many other bacterias, wikipedia dosent have a article on C. estertheticum yet. http://en.wikipedia.org/wiki/Clostridium

This is sort of related to human hubris. We design all the cooling & packing procedures to eliminate the usual bacteria spoiling the meat. The idea was to have safe meat but then other bacteria pop up. They were there all the time but were outcompeted by the others. Eliminate them and there's a whole new world for those who are lying in wait.

Clostridium difficile does the same thing in humans. When the other gut flora has been eliminated because of antibiotic treatment it can become a big problem to patients in hospitals.
