Default Chicken pot pie

Chicken pot pie is what I am making today. I had a left-over rotisserie chicken in the frig so I decided to give it a try. Then I realized, I have never made a pot pie before. But I was thinking: "How hard could this be?" I just needed a guideline to follow so went to Youtube because I am visual learner. I found this one, but I will make my own crust instead. I really need to eventually purchase a good pie plate though. I have been using the tin ones in the past. Any input or better ideas on making chicken pot pie would be greatly appreciated.

Pot pies are a favorite around here. Sometimes we have the two crust type like the one above. Sometimes we use puff pastry as a topping (be sure to roll it no thicker than a half inch and cook it in a fairly hot oven). Sometimes we make a biscuit crust to put over the meat and vegie sauce and bake turning the biscuits over about midway during the cooking time.

We like our filling a little less thick than the one above.

I like to throw in a few cubes of cooked potatoes, some sauteed mushrooms, and some sage and thyme.

My chicken pot pie is actually more of a "Chicken Friccassie."

Simmer cut up chicken, carrots, onion in broth. Brown a plain rue (butter, flour, salt, pepper) in a casserole dish. Add in the chicken, vegetables, and broth, stirring to create a thick gravy.

As an alternative method, either brown the chicken very well in a bit of olive oil, or grill it on the barbie prior to putting it in the broth to simmer.

Cover chicken and gravy with a plain biscuit topping and bake in a 375 degree oven until the biscuits are browning, and the gravy is bubbling up through the cracks between the biscuits. (Takes about 30 minutes..,)

The chicken pot pie is in the oven. That was a lot of work just to get rid of some left-over chicken in the frig. Now I know why people buy the frozen kind at the grocery store, but hopefully it will taste good and be worth the effort. The next time I do this, I am going to plan ahead and make several pies, then put a couple in the freezer.

The lady in the video did not tell how much flour to use so I just guessed. It didn't seem to get thick enough so I added a little corn starch. The top crust was a little tricky since I had never made a pie with top crust but I figured it out. I didn't have any frozen vegetables besides peas so I had to cook the vegetable too. Now I have to clean up my mess in the kitchen...

Oh yeah, and I got a good laugh from AB's video.

Wow, the chicken pot pie turned out better than I expected! In fact, that is the best tasting pot pie I have ever eaten. The filling was a combination of chicken, onions, mushrooms, cubed potatoes, carrots, and frozen peas, along with the sauce I made based on the recipe. Maybe next time, I might add a few more spices like flowerchild mentioned.

I made another chicken pot pie. This time I used a glass pie plate that I just bought. Seems like it takes longer for the crust to brown. The pie is cooling on the counter. I set the alarm clock to get up and put it in the frig once it cools. Yeah, this is late to be baking, but I got a late start. Now, I was thinking about watching one of the Walking Dead episodes...
