Default March Munchin' 2012

Whatcha Munchin' in March? For us March is the beginning of spring foraging and wonderful fresh additions to salads. The great after heavy winter meal clean out The seasonal cycle of eating! Holiday wise we're looking at St Patrick's
Day. Traditional Irish recipe ideas are welcomed!

Well, we have a good, old fashion, New Hampshire snow storm blowin' through.

I have last nights chicken stew on the stove (getting better and better) and I just put in some corn meal dumplin's for an early lunch.

You wouldn't know it from looking out the window but winters almost over...

I'm thinking a batch of bangers and mash is in order. That freezer has all kinds of treasures and I'll bet I can find some!

I had to chuckle at what you wrote. Yeah.......all kinds of mysteries down there in the bottom of my freezer too....long forgotten. Digging down deep in the freezer is like going through a "plunder box"........ya never know whatcha gonna find down there.

Tonight was a special treat for me....well, just cause I haven't bought any in maybe two years and boy was it ever delicious.

I got some lovely fresh cod at Costco yesterday.........had it tonight sauteed in butter and milk with granulated garlic, sea salt and course ground Malabar black pepper. It was heavenly.

Sides were rice pilaf and baby broccoli crowns.

Ummmmmmmmm, it was very satisfy to the palate.

I like just a taste/hint of mint after dinner so I keep a box of Junior Mints in my fridge. Just a couple of those (they are heavy on the mint) is just enough to create the illusion of a full dessert minus a whole lot of extra calories and satisfies the sweet tooth too.

DH fixed chicken tenders for dinner last night with a glass of milk for my drink. Afterwards he brought me a nice orange for desert.

Not yet DS. Its just chickweed, henbit, dandelions, ramps and thistle so far.

Yesterday we stopped at a little greek place thats opened here and had Gyros. We were so full we skipped supper. Today Max's DD and SIL are coming to stay the night and we're running away from home

Great weather here today, so we'll be grilling some steaks, asparagus, along with baked potato and all the fixins and salad (including some "yard clippings"...)

A beer for him and wine for me...

Braised short ribs and a pot of "white beans with 20 cloves of garlic".

The last couple of nights I have been raiding the fridge cleaning out left overs.

Tonight I had a hunger for veggies so I fixed fresh rainbow chard, pan fried red cabbage with bacon fat and fresh broccoli.....all organic.

I did scarf up the last of a rotisserie chicken from Sam's Club....

all was yummy.

Peanut butter cup for dessert.

and some lovely rum to wash it all down.

Life is good and all is well.

We had bass and brim fresh caught from the pond, new side shoots from last years cabbage plants and hushpuppies. A taste of homestead heaven.

I bought some really nice roast beef Sunday. It's medium rare and one slice on bread is a great sandwich. I had one of those sandwiches for dinner.

Don't know how many of you cook purple cabbage in a cast iron skillet but it is interesting how when thoroughly cooked .........that cabbage looks almost black.........but when cooked with the bacon fat it is just sweet, sweet, sweet.

It s awesome.

ON that rotisserie chicken........I added more garlic granules and lemon pepper and butter............just delicious.

Tummy all happy.....

Hey blue gecko............wanna join me for a smoke?

I'll meet you out on the back porch in the rocking chairs.

Bring us another round of refreshment and we can reminisce about days gone by.

Tonight was basic food but very tasty.

I cooked a box of Mac & Cheese........

had leftover broccoli

and cooked up a couple of Angus beef hamburgers.

Me and the puppy are all happy.

I am so tired of cooking and then having to clean up all the mess that

next month I think I am going to eat out or get take out for the most part

of the month.

I'm just tired of doing dishes.

For supper last night, BG made roast chicken with our poultry seasoning/rub, seared brussel sprouts with navy beans. Deeeeelicious!

Yesterday the doorbell rang. The mail lady handed me a box and said, "If this tastes half as good as it smells, I want some!" What a DELICIOUS aroma wafted from that box! BG and Max's spices are here!

I went through the box this morning and I cannot wait to try them all. I will be reporting back!

Tonight was more left overs except for my neighbor brought me over a veggie side dish.

She called it by the spanish/mexican name but I already forgot that........

but basically it is zucchini with corn and green chilies. Heavenly.

I combined that with the mac & cheese and left over hamburger crumbles with Montreal Steak seasoning.......... threw it all in a pie plate and warmed it up in the oven.

filled my tummy and I am all happy about that.

Last night I made an Annie's organic mac & cheese box dinner, and warmed up some tomato and roasted red pepper soup. It was a nice combination. Had a Deschutes Black Butte Porter along with it.

Tonight I am fixing a nice Rump Roast (gosh I just love that rich gravy it makes...nice and dark and rich)....along with baked potatoes loaded with sour cream, butter, chives, garlic granules and bacon bits.

After all the above....... sides are inconsequential LOL........but I will make a side....something green maybe or maybe some summer crook-neck squash.

There will be lots of left overs for sandwiches, etc. Ah yes, sandwiches smothered in horseradish sauce.

We're having Chicken Breast Medalions in an Italian Herb Sauce. We didn't make it, Max found it in the freezer, vac sealed, looks fine, made by Tyson. So we'll see. We'll serve it over egg noodles with a side of steamed broccoli.

I think it is going to be rib eye, sweet potato fries and spinach tonight. I might fire up the grill for my first barbeque of the year. We shall see.
