Gluten Free baking mix (Bisquick)
This can be used 1 for 1 in any recipe calling for a Bisquick-style baking mix.
1 1/2 c. brown rice flour
2 c. corn starch (OR tapioca starch)
1/2 c. soy flour or sorghum flour
2 tsp. baking powder
2 tsp. salt
1 1/2 tsp. baking soda
2 tsp. xanthan gum
1 stick of butter (OR shortening), cut into pieces
Mix all dry ingredients together. Using a food processor, or a pastry blender, mix the butter or shortening into the mix. Blend until the butter is evenly distributed.
Store in the refrigerator. Bring to room temperature before using.
