Default Appetizing April

What's cookin'!

As most of you know, I tend to graze these days. Today though, the plan is chicken enchiladas and pumpkin pie.

Since its a saturday I'm not cooking but I think hubby wants something from wendys *shrugs* its one day a week so I don't care. Its not like we eat that way everyday like some people we know

I didn't feel up to cooking last night after surgery so we stopped at the store. DH had fish, mac & cheese and something with pasta in it. I had a ham ball in BBQ sauce. Yum!

Last night was boneless pork ribs. I baked them but didn't put sauce on them, DH doesn't like BBQ sauce so if I want it I add it at my plate. Tonight maybe the left overs.

It was 79* today and it was to hot to cook. We had to go get milk so we looked at the deli. For less then $3 I fed us both. DH had two chicken legs and I had a ham ball.

Two kinds of frittata that I'd made for a potluck...one with asparagus and mozzarella, with garlic and a bit of nutmeg, the other spicier, with chopped salami, roasted red peppers, garlic, and pepper jack cheese. We wiped out the leftovers....

It's warm and sunny out today so hubby's grilling some porterhouse steaks along with some potatoes I sliced, seasoned with salt, pepper, topped with a few pats of butter, and wrapped in foil. I'll steam some broccoli to add to the plate and for dessert we'll have homemade vanilla ice cream topped with some strawberries I dug out of the freezer.

Taco salads

too hot to cook much. it was 84 at noon here

guess I know what we'll be doing this weekend. putting up the awnings lol they do a great job knocking the temp in the house down by about 20 degrees. really helps save on the ac in the summer

Much better today. Down to the low 70's. Today we'll have slices of spiral cut ham, some green beans and potatoes and crescent rolls

Yesterday I made fried cabbage and used sweet Italian sausage instead of smoked or kielbasa

Today is meatloaf, baked hash brown cups and california mix veggies


the temps have dropped back to the 50's for next couple of days with a chilly rain falling. definitely comfort food type of weather

Fauxjitas...beef strips marinated in orange juice, Worcestershire sauce, cider vinegar, spices, garlic. Drained, browned, then simmer for an hour or so in good red salsa and the marinade. Onion and green pepper slices stir fried separately, added to the rest a minute or two before serving with a vermicelli soap seca or rice.
