I had a cheeseburger and thanks to Livi, a hot dog. She put it on my plate and gave me that look and Grandma's heart melted.

I gave hubby the choices of bbq chicken thighs, grilled pork chops or chicken salad sandwiches.

He chose the chicken salad and pasta salad so thats what we're having

I made him a cherry pie the other day and he has that as a dessert if he wants

Tonight for supper I'm making shrimp and broccoli stir fry with basmati rice. Local strawberries are now available, so we're having strawberry shortcake for dessert topped with whipped cream!

I'm not sure what I'm having but it will be cooked on the grill at DS's 4th of July BBQ.

I made this mac & cheese for the 4th using aged white sharp cheddar and medium sharp cheddar. OMG - so not on the diet but absolutely delicious:

I also made this amazing grilled asparagus salad, again, using the aged white sharp cheddar. With the exception of the asparagus, pita chips, olives, olive oil, and cheese, everything else came out of my yard:

Lunch today was wraps and a salad. For the wrap I mixed together some chopped, cooked chicken, dried cranberries, chopped pecans, chopped celery, salt and pepper, and enough mayonnaise to moisten. Put it in a whole wheat flour tortilla and rolled it up. For the salad I combined some mixed greens with chopped apple, grapes, pistachios, chopped almonds, bits of old cheddar cheese, and tossed it with Renée's classic ranch dressing.

Beef and bean burritos with cheese, salsa, sour cream, guac, and yellow rice for supper.

Chicken salad sandwiches and pasta salad


heat index is triple digits today. too hot for anything more than what I'm making. I already poached the chicken breasts and steamed the veggies for the salad this morning and I love that 3 min pasta thats on the market

Supper last night was honey soy chicken thighs with yellow rice and bok choy.

For the chicken I mixed together about 4 tsp each of clear honey with soy sauce in a bowl. I added 4 boneless, skinless chicken thighs, turned them to coat in the marinade and left them in the marinade for a couple minutes, turning them a couple more times. I put the chicken in a cold pan, along with whatever marinade was left in the bowl, and then turned on the heat to about medium. You have to put the chicken and sauce in a cold pan because you want the thighs to stew, and you don't want the honey to start to burn before the meat's cooked. Leave in the pan until cooked, turning once or twice during cooking.

For the bok choy (which is growing like a weed in my garden!), I washed 4 medium plants well and left them to dry on a clean dish towel. I cut them in half lengthwise, put a large frying pan on the stove and got it heating up over a medium heat. I added some grapeseed oil and then put the bok choy in, cut side down. I let the bok choy to start to caramelize for a couple minutes, then turned it over, added 3 slices of fresh ginger, plus 3 Tbsp of soy sauce and a small splash of water to the pan, then covered and left to steam until the leaves were wilted and the stems had softened.

I have chicken and rice left over, so I'll go out and pick some more bok choy this afternoon and that'll be supper again tonight. A simple, yummy meal!!

For supper tonight hubby cooked some prime rib on the grill. I made 2 sides to go with the steak: an orange, quinoa and black bean salad and a salad of mixed greens.
