Default Augustations and Hot Menus!

Whatcha cooking?

I've got some beef and lamb cooked and ready to go into a nice stew. Some of that stew will be delivered along with biscuits or cornbread to the farmer down the way that brings me hay. It's a heck of a deal! The rest will go into something for the farm crew. I haven't decided yet

Anything that can be eaten raw, alive, or nuked...stove is only being turned on for morning coffee.

We had quite a crew today. Bacon, hash and egg cassarole for the meat eaters and pan roasted vegies and pasta for the vegetarians. I had left overs for dinner LOL

Grilled pork chops, lime and cilantro rice, and bok choy (from the garden) sauteed first in a little grapeseed oil, then I added some light soy sauce to the pan with slices of fresh ginger, covered and steamed for a minute or two until the leaves were wilted.

My niece and her boyfriend went fishing and brought us some very nice rainbow trout for supper. I butterflied the fish, rubbed it with olive oil inside and out, put a little bit of lemon juice on the flesh inside the cavity, seasoned well with salt and pepper inside and out, wrapped in foil and put on the grill until done. I made fennel and orange salad to have as a side and hubby had picked up some oatmeal raisin cookies at a local bakery when he went to town so we had some of them for dessert. A most excellent meal!!

DS grilled tonight and brought me a bacon wrapped pork tenderloin, a couple of hamburgers and a couple of hotdogs along with mixed veggies in butter and garlic.

I smoked a turkey for a pot luck yesterday....It wasn't quite done and it was getting late so I thickened the gravy for those roasts I had cubed and made mashed potatoes LOL. It was a great pot luck and now there's LOTS of smoked turkey for sandwiches. We all had a nice evening in spite of the slow turkey.

Yesterday was cool in the morning so I fried fish sticks, a pound of bratwurst, three pounds of bacon, hard-boiled 18 eggs, made tartar sauce, did three loads of laundry and hung it up.

The dogs were delighted to have so many skillets to lick out. I then cleaned up the kitchen wreckage. Not running the dishwasher till this heat wave is over....

There is one dish that I absolutely despise. Mac and Cheese. For some reason known only to the chief architect, I have had a craving for this messed up idea of food. Guess I'm making mac and cheese tonight. I have diced ham in the freezer so I'm good to go.

Tonight we had honey sriracha tofu with mango and black bean salad. For the tofu, I dried it well, chopped it into 1 inch cubes, dusted it in cornstarch, shallow fried it in a little bit of vegetable oil in a cast iron pan until crisp and crunchy, and then I added in a sauce I made with minced garlic, honey, sriracha, rice vinegar, and soy sauce. Once the tofu was nicely coated in the sticky sauce, it was done. I served that with a mango and black bean salad I'd made earlier and put in the fridge. Ingredients were a chopped up a red pepper (fairly small dice), a minced jalapeno, some thinly sliced green onions, 2 mangoes (peeled and chopped), a bunch of chopped cilantro leaves, and 2 cans of drained and rinsed black beans. I made a dressing of the zest and juice of 1 lime and 1 orange, a generous splash of red wine vinegar, and salt, pepper and sugar to taste. I whisked the dressing ingredients together, then added that to everything else, gently stirred, covered, and put in the fridge for an hour. Dessert was an apple and rhubarb crisp I made with the last of our rhubarb from the garden.

Last night was our local Ruritan Club's annual fish fry - we donate the proceeds to our local Little League, Boy Scouts, Girl Scouts, etc. We served fried fish, hushpuppies, pork rinds, potato salad, cole slaw, fresh local tomatoes, watermelon, and lots of golden beverages.. It's a lot of work but the community enjoys it and we raise a lot of money! The weather smiled on us and it was very pleasant with low humidity!
